This homegrown beef was born and pasture raised right here in Tangipahoa parish and has never come into contact with any hormones or antibiotics. It is also much leaner (and dare we say tastier) than regular store bought beef. These porter-house steaks are perhaps the finest cut of meat we offer. For CSA customers, beef purchases will be added to the next vegetable delivery.
All of our cattle live together in large open air pastures on our 20 acre family farm. We supplement a custom feed mixture twice a day for the final six months to develop the flavor of the meat. Our beef is slaughtered locally and then aged for at least 2 weeks. This aging process is one of the great benefits of buying local farm raised meat in this way, as longer aging improves the flavor of the beef by allowing natural enzymes to break down the tissue, making it more tender. This process also allows some of the water in the meat to evaporate, concentrating the flavor. As mentioned our beef is free of any growth hormones, antibiotics or other additives.
